Christmas Cake and Cookies with i am baker's Amanda Rettke!

By Ole & Shaina Olmanson |

You know those people you meet that you’re just in awe of once you meet? Amanda from iambaker.net is that person for me. She’s kind, gracious, caring, and she makes the most amazing cakes and cookies you have ever seen. No, really. Amanda’s skills in the decorating department are incredible, but what floors me even more is her ability to dream up these sorts of projects. Her creativity and artistic ability are astounding. (Stop blushing, Amanda, it’s true.)

So, this last week before Christmas, let Amanda give you a little tutorial on how to make some jaw-dropping desserts that are sure to impress the in-laws, the ‘rents, the cousins or whomever you’re looking to make a splash with this Christmas.

Let’s start with the Christmas tree ruffle cake. Not only are the ruffles gorgeous, but the inside is incredible as well, and this isn’t the first time Amanda has put fun and fancy designs inside the cake. No, not be a long shot. In fact, she’s done several, and she has a few tutorials if you’re looking to get into it yourself.

There’s always this amazing Faith cake, if you’re looking to bring it back to Jesus with the slice of the knife.

And if you’re looking to share the love, check out the heart cake. Perfect for anytime you’re looking to spread some love, but save this one away for Valentine’s Day. This is also the tutorial where she demonstrated the carving that goes into filling a cake with a different cake.

And Amanda doesn’t just do cakes. She is also an expert cookie stylist. I am always impressed with her fun cookie designs, and there is something about them that just makes me smile with delight. They’re not overly frilly, just the right amount of class and sass. I love them almost as much as I love Amanda. Check out her Cookie Recipe that just made the Top Ten in the L.A. Times Holiday Bake-Off! Way to go, Amanda! And when you’re done there, she’ll show you how to decorate your own cookies with tips and pointers to make it easy for anyone to do.

Really, I could go on for hours about Mrs. Rettke, but I’m sure you can see for yourself that she’s incredible. You can check out her cookie gallery and follow her on iambaker, and I’m sure you’ll be glad you did.

Amanda is one more talented lady for sure. The best part about Amanda though is her personality and sweetness. I think it exceeds her talent! And we can see for ourselves – she is unbelievably blessed in that department.

So excited that you featured her.

Amanda is incredible! Seriously, when I try to wrap my brain around those cakes, it hurts a little. I’m pretty sure she has a doctorate in Engineering that she is not telling us about.

I see big, BIG things on the horizon for her….classes, TV, book….she deserves it!
