This recipe, with a mixture of whole-wheat and quinoa flours, is big on flavor and nutrition. All in all, a great weekend treat for everyone on the family.
Cinnamon Banana Waffles
2 tablespoons butter, melted and cooled
1 cup whole wheat pastry flour
1/2 cup all-purpose flour
1/2 cup quinoa flour
1 tablespoon cinnamon
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups milk
1 tablespoon vanilla
1 banana, mashed
Preheat your waffle iron, and preheat your oven to 200 degrees.
In a large bowl, combine the flours, cinnamon, baking powder, and salt.
In another bowl, lightly beat the eggs. Then add the milk and vanilla. Pour the milk mixture into the flour mixture and stir just until combined. Fold in the butter, and then the mashed banana.
Pour 1/4 cup of batter per waffle into your iron and cook until golden brown. Place the cooked waffles onto a platter in the warm oven.
Serve waffles with some banana slices, butter, and a drizzle of warm maple syrup.
