Cinnamon Roasted Almonds
My favorite treat to give or receive during the holidays is roasted nuts. There are lots of companies that sell expensive roasted nuts during the holidays, but why not make your own at a fraction of the price? These cinnamon roasted almonds are a perfect gift to give this holiday season, and so simple to make. You can give these as a gift with a few other roasted nuts, popcorn balls, or other holiday treats. You could also just add a small bag of these tied to the gifts you’ll give. Almonds are a favorite snack for many people. Not only are they healthy, but when they are cinnamon sugar coated like these, they are just plain irresistible.
I make these with more sugar cinnamon coating than most recipes call for, because that’s the way we prefer them. If you’d like less sugar cinnamon coating, just double the amount of almonds used in the recipe from 2 cups to 4 cups.
Cinnamon Roasted Almonds Recipe
Ingredients
2 cups Almonds
1 egg white
1 tablespoon water
1/4 cup sugar
1/4 cup dark brown sugar
1/4 teaspoon kosher salt
1 teaspoon roasted cinnamon, or regular cinnamon
1 teaspoon vanilla extract
Method
1. Preheat oven to 250 degrees. Add egg white and water to a large bowl. Beat egg white until you have soft peaks. Add sugars, salt, cinnamon, and vanilla extract. Mix well. Spread nuts in a single layer on cookie sheet lined with parchment paper.
2. Bake at 250 degrees for 1 hour, stirring almonds once, halfway through cooking.

holy moly, these look and taste great, but are so seriously glued to my baking sheet that i think i will have to throw the batch AND the sheet out. damn.
Oh my gosh Emmitt, I’m so sorry! After you get off what you can, try soaking in hot soapy water before tossing.
I added to the recipe to use parchment paper, I think I just used Pam, but I use Pam with all my baking and forgot to add to recipe, I’ll make sure to do that from now on.
