Clementine Olive Oil Cake: The Easiest Cake in the World!

Clementines are a great reminder of a time when a simple piece of fruit could be as special as even the most over-the-top candy. Nowadays they’re less of a big deal, but I still I adore their sweet, bright flavor, and so I made this cake.

A cake in January? You betcha. But nothing complicated — just tangy, sweet clementine flavor, light-as-air texture, and fruity, nutty notes from the olive oil. One or two bowls, 35 minutes in the oven, and viola. Quite possibly the perfect winter cake.
