Coconut Oil: Peanut Butter and Jelly Cookies & Hashed Browns with Deliciously Organic

As I posted yesterday, my friend Carrie from Deliciously Organic has a new cookbook out and one topic she covers in the book is Coconut Oil. Back in November, Carrie told me that most of the bad press coconut oil has gotten is because studies were done on hydrogenated coconut oil which, like all hydrogenated oils, is bad for you. Period.

She also told me that you can use Coconut Oil for all things cooking so I went poking around her site and in her book to find the recipes I wanted to try for my first foray into Coconut Oil…..

Although I will send you to her site for the directions and her book for more recipes, I will share the ingredients so you can do some shopping.

Peanut Butter and Jelly Cookies
1/2 cup coconut oil
1 cup arrowroot
1/2 teaspoon sea salt
1/2 cup organic whole cane sugar or sucanat
1 tablespoon vanilla extract
1/3 cup raspberry preserves

Hashed Browns
Adapted from Barefoot Contessa
Serves 4
5 tablespoons unsalted butter
1 1/2 pounds boiling potatoes, peeled and cut into 1/2-inch dice
2 medium yellow onions, chopped
2 teaspoons coarse sea salt
1/2 teaspoon freshly ground black pepper
