On a recent gloomy afternoon, I was desperately in need of a fast, healthy lunch. Digging around in the fridge, I stumbled on a host of vivid vegetables and decided to toss them together to make this vivid, crunchy, lemony salad. A mixed veggie salad can bring a big pop of color to dreary winter tables, and all those colors mean the dish is packed with lots of healthy vitamins. Bitter greens like radicchio and frisee balanced by sweet and smoky cippolini onions, and creamy Asiago cheese, make this salad downright hearty, especially with a couple of over-easy eggs.
