    I make a peanut noodle dish with lots of veggies stir-fried in sesame and peanut oil. Add cooked soba noodles and dress with peanut butter, soy sauce, chili oil, lime juice, rice wine vinegar, salt, sugar and hot chili flakes. Good hot or cold!

    my favorite vegan recipe (lately) is this one:

    adapted from a recipe in Gourmet, makes eight generous servings

    1 preserved lemon
    1 ½ pound butternut squash, peeled and seeded, and cut into 1/4-inch dice*
    4 tablespoons olive oil
    1 large onion, chopped
    1 pound pearl couscous
    1 cup chopped fresh flat-leaf parsley
    1 cup roasted salted pecans, chopped**
    ¾ cup golden raisins
    ½ teaspoon ground cinnamon
    salt & pepper

    Preheat oven to 475 degrees.

    Toss squash with one tablespoon olive oil on a large, rimmed baking sheet. Sprinkle with salt and pepper, and roast for about twelve minutes, stirring once. Put roasted squash in a large bowl.

    Heat two tablespoons olive oil in a large skillet over medium high heat. Saute onions in oil until they are just golden, about seven minutes. Add onions to large bowl with squash.

    Cook Israeli couscous in a large pan of boiling water until tender, about ten minutes. Drain but don’t rinse. Add couscous to squash and onion mixture. Salt generously, add a tablespoon of olive oil, and toss.

    Scrape the pulp out of the preserved lemon and dice the peel finely. Add diced peel to the couscous and vegetables. Add a tablespoon of the brine from the jar of lemons.

    Add nuts, parsley, raisins, and cinnamon to the bowl. Toss. Taste for seasoning and add more salt, cinnamon, or lemon to taste.

    My vegan inspired recipe is actually something I just made last night because it is my new favorite meal– Coconut Red Lentil Soup w/ Coconut Brown Rice! It turned out better than I thought and was so easy, I had never attempted anything in this realm before, but it was a success, my husband loved it too!     This book looks fantastic! I’m already a vegetarian, but am trying to incorporate more vegan dishes, and I’m sure this would be a great help.

    My favorite vegan recipe is the somewhat bastardized version of channa masala my dad and I perfected over Christmas break. I made it for my most determinedly carnivore friend last night, and even she liked it!

    Homemade nut butters are my eternal inspiration source. Beginning with blending different nuts together, adding spices, flavoring etc. Then once the nut butters are done, not only does it make me want to try all sorts of breads, I love to use that to make baked goods such as cookies… Endless and addictive goodness!

    Last night I made the sweet potato veggie burgers and they were a fabulous treat. I loved that the recipe was quick and easy with very few ingredients and very CLEAN ingredients..I actually made them a bit larger than planned but that wasn’t a big deal. Served it with a large serving of broccoli rabe w/ garlic and enjoyed every bite!! So glad I found this site and really must obtain a copy of this book!
