Creamy Ricotta Pudding: An Easy Dessert That’s Ready in Seconds

Is dessert a regular part of your family dinner? We tend to have something on most nights, but it’s definitely not an everyday thing. I do like to serve something sweet after a meal when we’re entertaining, though. It’s just a nice way to end a meal with friends. But if you’re cooking a big dinner, it’s not always easy to also make an elaborate dessert. That’s where this simple, creamy ricotta pudding comes in.

Ready in about 1 minute flat, it doesn’t get easier than this. And though it takes only seconds to prepare, the flavor and texture will impress anyone. In fact, this dessert is so delicious that it might just be too easy to make!

Ricotta Pudding (adapted from The New York Times)

1 lb. fresh ricotta cheese
1/4 cup Kahlua or other coffee liqueur*
1/4 cup honey
unsweetened cocoa powder
fruit for garnish

Combine the ricotta, liqueur, and honey. Spoon into small serving bowls, cover, and refrigerate. To serve, dust with cocoa powder, and a drizzle of honey, and top with a few fresh berries.

If serving to kids, consider using 1 – 2 tablespoons almond extract instead.

    I am from Barbados…Riccotta is NOT part of our daily diet so I was quite excited to try this cheese in as many ways as possible and I love this recipe for its simplicity…
