I’ve been making this salad for a while now and love it. This time I added in a scoop of hemp seeds. Loved the texture they added – as well as the complete protein nutrition! If you are not into hemp – or simply don’t have them – you could sub sesame seeds or sunflower seeds – or your favorite nut. Pecans, walnuts, almonds and more would all work great in this salad.
Other yum add-ins:
* mandarin oranges
* sliced apple
* sliced radish
* cabbage shreds
* fave nuts or seeds (pumpkin seeds are my fave!)
I love to top my slaw with tofu cubes for a complete veg meal…
Curried Carrot Tahini Slaw
vegan, makes 3 cups
2 cups shredded or matchstick carrots
1/3 cup raisins
2-4 Tbsp tahini
2 Tbsp seasoned rice vinegar
2 Tbsp apple cider vinegar
1 Tbsp olive oil
1/2 tsp muchi curry powder (opt’l)
1 small sweet onion, chopped
1 Tbsp agave syrup (opt’l)
1/3 cup hemp seeds
1. Add all ingredients to a large mixing bowl
2. Toss well.
3. Chill in fridge or serve as is.
