Curried Carrot Tahini Slaw

When you’re looking for a fast, easy and flavorful side salad for your meal – whip up my Curried Carrot Tahini Slaw. These warmly spiced, slightly-sweet, crunchy cool flavors deliciously accent a wide variety of entrees. Pair this with your meal to have a nice change from an average green salad. This salad is packed with vitamin A, fiber, protein from the hemp seeds and healthy fats to satisfy. Optional muchi curry powder adds a mild spicy kick…

I’ve been making this salad for a while now and love it. This time I added in a scoop of hemp seeds. Loved the texture they added – as well as the complete protein nutrition! If you are not into hemp – or simply don’t have them – you could sub sesame seeds or sunflower seeds – or your favorite nut. Pecans, walnuts, almonds and more would all work great in this salad.

Other yum add-ins:

* mandarin oranges
* sliced apple
* avocado
* sliced radish
* cabbage shreds
* fave nuts or seeds (pumpkin seeds are my fave!)
* beans

I love to top my slaw with tofu cubes for a complete veg meal…
