Dinner in Minutes: Linguine with Asiago and Lemony Garlic Butter

Linguine with Asiago and Lemony Garlic Butter
We all need delicious and speedy dinner ideas, and this lemony linguine with garlic butter and chives fits the bill perfectly. In the time it takes to cook the pasta, you can have a flavorful garlic butter ready to go. To serve, toss pasta with Asiago and fresh chives and pair with a simple salad. That was easy, wasn’t it?

Linguine with Asiago and Lemony Garlic Butter

Linguine with Asiago and Lemony Garlic Butter
serves two

whole wheat linguine
2 tablespoons unsalted butter
3 tablespoons minced garlic
1/4 teaspoon sea salt
ground black pepper to taste
zest of 1 lemon
2 tablespoons minced chives
1/4 cup shaved Asiago cheese
2 lemon wedges

Bring a pot of salted water to a boil and cook the linguine to al dente.

Meanwhile, heat a small skillet over medium heat. Add the butter and cook until melted. Add the garlic, sea salt, and ground black pepper. Edge heat to low and cook garlic for two to three minutes. Off the heat, stir in the zest and set aside.

Drain the pasta, toss with garlic butter, and fold in the chives and Asiago. Finish each dish with a squeeze of lemon, and serve.
