I’m finding that this time of year is so jam packed with holiday activities and fun that it’s a must that I plan out some meals during the week or we would end up just eating take out every night. I’m not a die hard meal planner but I do believe in the benefit of it for sure. I know the days where I am prepared for dinner, before dinner, run much much smoother.
Even being prepared can’t help you if you just don’t have the time to cook a meal on an extra busy day. That’s where the slow cooker comes in handy. I know there are many folks out there that swear by their slow cooker…I wish I was one of them. I try so hard to remember to use it, because every time I do, I always wished I used it more often. A few weeks ago, on a busy day, I threw together this simple and oh so healthy vegetarian chili. I had everything I needed on hand, and was able to enjoy leftovers for lunch for the next few days.
