Warm the eggs!
I’m horrible for forgetting to take eggs out of the fridge to come to room temperature before baking and I know when I use cold eggs I don’t get as much “lift” in my baked goods. A couple of years ago I learned a trick that was a life saver; place the eggs in a bowl and cover with very hot tap water for 3-4 minutes. The eggs will warm through without cooking and will be ready to use in your recipe within minutes.
