Who: Brooke McLay, a mother of four based in Colorado
Why we love this blog: McLay is on a mission to convert her four children’s picky-eater diets into vegan ones. Determined to follow a plant-based diet on a budget, Brooke chronicles fun ways to get the fam psyched about eating their greens. Part of her secret is that she keeps things fun and familiar with quinoa burgers and Easter Bunny carrot soup. (Awesome photos also help, of course.) The food porn McLay posts on her own site as well as on Babble’s Family Kitchen blog gets our tummies rumbling instantaneously.
