Who: Julie Kelly, a mother of one daughter based in Boston, Massachusetts
Why we love this blog: Vegetarians, vegans, and those interested in making their dinners a little healthier gather here for the collection of yummy plant-based meals that satisfy kids and adults alike. Kelly is a master at sneaking nourishing ingredients into even the most indulgent of foods (see Exhibit A) and creating dishes that make those stuck on traditional meat-and-potatoes dinners forget that meat exists at all. While Mighty Vegan does occasionally touch on the politics of the meat-free lifestyle, the focus here is almost entirely on recipes.
