Who: Kelly Rudnicki, mother of four, Chicago
Why we love her: When her son was diagnosed with severe legume, peanut, dairy, egg, and tree nut allergies, Kelly decided to find a new way to feed her family – and keep her son alive. On her site you’ll find allergy-free versions of classic treats like gingersnaps and scones, as well as a range of thought-provoking posts such as “Should Peanuts Be Banned on Airplanes?” that get to the core of what families with food intolerances deal with on a daily basis. In Kelly’s words, “it has become my life’s purpose to raise awareness and increase funding for food allergy research.”
