Who: Dawn Viola, mother of two kids, Orlando

Why we love her: Even if you’ve never set foot in a kitchen before, Dawn proves how easy and affordable it is to cook from scratch using local foods. Cooking this way became a matter of life or death for Dawn when she found out she had an allergy to legumes including soy and nuts. Food allergies or not, her recipes such as gluten-free macaroni and cheese and individual Italian-style meatloaves are meals anyone will enjoy. If you’re lucky enough to live in the Orlando area, you can pop in for one of her divine cooking classes.
