Part of my children’s daily routine involves one or two healthy snacks each day. A little something between meals to keep them going without relying on heavy sugars or caffeine. One of our favorites is this simple blueberry mint smoothie. It comes together in a jiffy and I add a dose of ground flax seed for extra micronutrients. They can’t taste it and don’t even know it is in there!
The kids have named this Dory’s Blueberry Mint Smoothie because it is the same color as Dory, one of their favorite characters, in the movie Finding Nemo. Today I am sharing our favorite recipe as part of Disney’s Magic of Healthy Living campaign. As part of their quest to help partner with parents in their quest to raise healthy kids this campaign introduced the Mickey Check. It is a tool that makes it easier to identify foods and recipes that contribute to a healthy diet. I only wish we could’ve given this smoothie to Dory. Blueberries are so good for memory and she could really use some improvement in that area!
Dory’s Blueberry Mint Smoothie
Serves 2 large servings or 4 child servings
2 cups blueberries, washed and picked over for stems (or you can use unsweetened frozen berries)
1 cup 1% plain Greek yogurt
1 cup 1% milk
2 teaspoons honey
2 teaspoons ground flax seed
1 teaspoon chopped fresh mint leaves, plus more whole leaves for garnish
Place all ingredients into a blender and puree until completely smooth. Divide the smoothie evenly amongst two large cups. For smaller portions this will easily fill four children’s cups. Garnish with a sprig of mint leaves and serve!
