I recently read an article on CNN news on some of the most nutritional foods for kids. Among their list of ten powerhouses were cabbage, low fat Greek yogurt, salmon, and basil. It’s a pretty informative list. Among the foods that weren’t a surprise were blueberries and tofu.
Blueberries are the perfect summer fruit—the seeds are small, there aren’t any pits, and they aren’t hard to find organic. My family loves them, and we’d eat them by the gallon if we could.
But tofu—not so much. But never fear, this smoothy is so good, the tofu is blended right in and is virtually undetectable.
Firm tofu works well as a meat replacement, but for smoothies, be sure to purchase the silken or soft variety. It really lives up to its name. Once it’s blended in, the tofu makes the whole drink very smooth and very silky—imagine that.
Blueberry Smoothy with Silken Tofu
3 cups frozen (defrosted) or fresh blueberries
juice of 1 lemon
6 ounces 100% fruit juice concentrate
1/4 package silken tofu
Combine all ingredients in a blender and mix until well-blended.
