Here are a few creativity-inspiring Dr Seuss Quotes and a silly breakfast recipe that I’m sure Dr. Seuss would approve of – since Oranges, Pasta and Tofu might sound just as silly to some as Green Eggs and Ham..

Happy Birthday Dr. Seuss! He would be a ripe old age of 107 today. What an amazing man who has given the world so much fun, silliness and inspiration!

Dr. Seuss may be known for his children’s books, but lets be honest, his creative “think-outside-the-box” attitude can carry over into so many aspects of our daily lives. Especially in the kitchen! There is no greater tool in the kitchen than to be creative and experiment. You just never know what you may discover or create.

Like when I created this silly breakfast recipe for Good Morning Pasta Scramble a few years ago. I wasn’t sure if my blog readers would approve of tofu scramble over top orange-juice infused pasta! But one bite and you’ll see why the recipe totally works… Citrus, aromatic tofu scramble, tender pasta and fresh orange slices. Healthy, high-energy, protein-packed breakfast deliciousness.

Try this healthy breakfast recipe! It’s kinda like the vegan version of Green Eggs and Ham. Except it’s not really green. (Unless you use green spinach pasta or rainbow alphabet pasta like I did.) Oh and there’s no ham. But still, you still see the *creative* similarities, right? ;)

Good Morning Pasta Silly Scramble
vegan, serves 2-3

1 1/2 cups tofu scramble (recipe link options below)
3 cups cooked pasta, any kind (alphabet pasta is fun for this!)
2 Tbsp soy milk creamer
1/2 large orange, juiced
1/2 large orange, peeled and diced
2 Tbsp vegan Parmesan cheese
1-2 Tbsp olive oil
dash of fine pepper to taste
1/2 tsp orange zest

for the tofu scramble use one of these recipes:

Saffron-Scented Tofu Scramble

Directions:

1) First cook the pasta. Drain pasta and place in large mixing bowl. Add a splash of olive oil to the bowl and toss the pasta well. Next add in the Parmesan cheese to the warm pasta and continue to toss well.

2) Next, fold in your fresh orange juice and chopped orange slices. And lastly, fold in the soy milk creamer, orange zest and black pepper. Cover the pasta and set aside while you cook the tofu.

5) Next, it’s tofu scramble time! Follow directions in recipe. Recipe Links: Classic Tofu Scramble or Saffron-Scented Tofu Scramble.

6) Plating. Add a scoop of pasta to each plate. Smooth it out flat so you can add your tofu over top.
