We’re serving up another after school snack idea. This is not only fun but healthy. I have to admit I’m not a fan of snakes. In fact I’m terrified of them but much to my dismay my boys seem to be attracted to them not to mention we have a lake in our backyard which is quite the snake magnet. But I’m willing to make these cucumber “snakes” if it means they’ll eat more veggies. It’s a win win! For even more dipping fun we serve them with a side of baby carrots.

What you’ll need:
1 cucumber – sliced
olives or capers – for the “eye”
roasted red bell pepper – for the “tongue”
ranch dressing – for dipping sauce
What to do:
1. Cut your cucumber slices in half. Arrange 8 pieces per “snake”. Place an olive/caper for the eye. Place slice of bell pepper for tongue. Continue until desired amount of “snakes” are made.
2. Serve with ranch dressing to dip.
