Sometimes I think I try to make dinners during the week a little too simple. Once and awhile it is nice to make something that is still easy but maybe just a little more elegant or sophisticated. This chicken dish was inspired by a recipe from Saveur Magazine a couple of years ago and it’s now one a favorite in our household.
Anytime you wrap pounded chicken breasts with a layer of goat cheese and proscuitto and then let it cook in a pan sauce… good things will happen. The combination of flavors and textures will resemble a nice dinner out at your favorite restaurant.
