These luscious-looking cheesy quesadillas are dairy-free! Now you may be shaking your head at me saying, “Why in the world would I want to use vegan cheese when making a cheesy quesadilla?”
There are a few reasons. Maybe you are simply curious about cutting back on dairy, and looking to experiment with a few dairy substitution ingredients. Or maybe you just want to give the new food trend of “vegan cheese” a shot. Vegan cheese is better than ever nowadays. It’s noting like the hard as a rock plastic-y vegan cheese of a few years ago. Though dairy cheese is higher in protein, non-dairy cheese is lower in fat – more importantly, saturated fat. Compare the nutrition facts for vegan vs dairy cheese:
Vegan Daiya Cheese (1/4 cup)
2g sat fat
Dairy Cheddar Cheese (1/4 cup)
6g sat fat
Dairy-Free Easy Cheesy Quesadillas
2 flour tortillas
1 Tbsp olive oil
1/3 cup vegan cheese, any flavor
2 Tbsp roasted salsa
1. Brush the ‘outside’ sides of each tortilla with 1 tbsp olive oil. Use remaining oil to coat saute pan.
2. Turn burner heat to med-high. Place one tortilla in, add the cheese and salsa and cover with tortilla.
3. Allow to cook for 1 minute on each side – or until cheese inside bubbles out the edges and tortilla crisps a bit.
4. Slice into triangles (I like to use a pizza cutter). Serve hot.
