Easy, Do-Ahead Slice and Bake Cookies For the Holidays!

Like bar cookies, slice and bake (or “icebox”) cookies are always a staple in my holiday baking repertoire. And with good reason, since there is much to love about this type of cookie.

Slice and bake cookie dough is typically formed into a log, and then chilled or frozen prior to baking. This is handy if you do a lot of baking because the logs take up little room in the freezer — so you can have a variety of cookies stacked up, frozen and ready to bake. I also appreciate being able to slice as much or little as needed – so having a few “logs” on-hand keeps me prepared for unexpected guests or a hostess gift for a holiday party.
