I’d like to blame my grilled cheese habit on my kids —— after all, it’s such an easy thing to make —— but the truth is, I probably ate as much grilled cheese before I had kids as I do now. I just like it, I suppose. One thing I really love about grilled cheese is its versatility. If you’re in a hurry, you just need bread, butter, and cheese. But if you’re in the mood for something a little more interesting, it works with a variety of ingredients. I recently made a grilled cheese with peach bruschetta, chipotle cheddar, and spinach that was a wonderful medley of sweet and savory flavors. It was a very grown-up sandwich, but one that kids will love, too.
