Yes, in under five minutes you can be spooning out these lovely potatoes. I make them quite often – as like I said – they are addicting!
Healthy stuff in here too. The hemp seeds are complete protein bits and tasty nutty and light. The cheezy, savory tasting nutritional yeast flakes are also packed with amino acids and even vitamin B12 which many vegetarians may have trouble finding in plant-based foods.
And the easy part? Well, don’t gasp in surprise, but I use dehydrated mashed potatoes. But not the “added flavors” kind. Just 100% potatoes with a hint of salt. Dairy-free. Vegan comfort food..
Easy Garlicky Mashed Potatoes
vegan, makes 3 cups
1 1/2 cups dehydrated potatoes
1/4 cup nutritional yeast flakes
3/4 cup water
3/4 cup unsweetened or plain non-dairy milk
1-2 tsp garlic granules or 5 cloves garlic
1 tsp maple syrup
1-2 Tbsp olive oil (a splash of truffle or hazelnut oil is also fab)
1/4 tsp truffle salt (to taste)
pepper to taste
garnish: 1-2 Tbsp hemp seeds
Add the potatoes and liquid (milk and water) to a bowl. Stir until the liquid absorbs in the potatoes.
Add the remaining ingredients – nutritional yeast, maple, and spices. (All except the hemp seeds and olive oil)
Microwave on high for 1 minute. Stop and stir.
Add more water if it looks too dry.
Heat for another minute.
Stir well. Taste. Adjust seasonings as desired. i usually add in another scoop of nutritional yeast because I love it so much.
Heat more if needed – add more liquid to suite how thick you like your potatoes.
Fold in the olive oil last.
Stir in a few hemp seeds then sprinkle over top as well.
