Easy Gourmet: Creamy, Egg-Free Spaghetti CarbonaraJane Maynard
Spaghetti. It’s the #1 go-to meal in our house for two reasons: it’s soooo easy to make, and the kids will always eat it. In fact, they literally jump for joy and cheer whenever I announce that it’s spaghetti night. Unfortunately my husband and I do not have the same response. It’s just such a boring, unsatisfying meal. Yup, I’ve gone from “kid who loves spaghetti” to “snobby adult who bags on spaghetti.” It happens.
Recently I decided to find a spaghetti recipe that was just as quick and easy as classic spaghetti but that would be tastier and more interesting. My search did not last long! I discovered a delicious spaghetti carbonara recipe from Christina Ferrare that uses simple ingredients that I already have in my kitchen (the only “extra” is pancetta), is simple to prepare (nary a raw egg to be seen), and that pleases the taste buds of the entire family, kids and adults a like. This recipe is a winner and has found a place on our family’s “go-to” recipe list!
