Do your kids beg you to order in Chinese….ummmm….all the time. Mine do, too! So, I conjured this easy healthy chicken recipe to pack in their lunch boxes. Because sometimes it’s just nice to feel like you’re eating takeout. And lots of times, it’s nice to save the takeout money, and know you’re kids are eating right. Packed with veggies and low-fat chicken breast, this simple recipe can served for dinner, or tossed together the night before, and packed in a bento box for lunch the next day!
Sesame Chicken Noodles
These easy, healthy sesame chicken noodles are perfect recipe for dinner or lunch!
- 1 packet soba noodles, cooked
- 2 tablespoons toasted sesame oil
- 1/4 cup olive oil
- 1/3 cup sushi vinegar
- 3-5 tablespoons soy sauce
- 2 cups cooked chicken breast, diced
- 1 red bell pepper, diced
- 2/3 cup shelled edamame
- 2/3 cup frozen corn, thawed
Toss all ingredients together in a large bowl. Add salt to taste, if needed. Serve warm or cold with chopsticks! Enjoy!
