Easy Holiday Breakfast: Gingerbread Pancakes with warm Maple Applesauce

Sometimes the very best breakfasts are those that are simple, hearty, and full of the flavor of home.  Whether you’re serving up a room full of kiddies, or a breakfast table full of friends and family, everyone is sure to love these simple gingerbread pancakes.  Rich with the flavors & spices of the season, these pancakes are light and soft.  Made all the better when served with homemade Maple Applesauce.  A perfectly delicious way to welcome a winter morning.

Gingerbread Pancakes

  • 1 egg
  • 1 tsp. baking powder
  • 2/3 c. white whole wheat flour
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1 Tbsp. molasses
  • 1 Tbsp. evaporated cane juice or brown sugar
  • 2/3 c. buttermilk
  • 1 Tbsp. butter, melted

In a large bowl, beat egg.  Add remaining ingredients and mix together just until nicely incorporated. Spoon onto a hot griddle and cook as you would regular pancakes.  Serve with warm Maple Spiced Applesauce.  Makes 8-10 small pancakes

Maple Spiced Applesauce

  • 1 c. applesauce
  • 1/2 c. pure maple syrup
  • 1 tsp. vanilla
  • 1 tsp. cinnamon.

Heat all in a saucepan until warm.
