These easy fiesta baked beans are a healthy, delicious treat. They come out sizzling hot and steamy! You can use any variety of bean, but I quite enjoy butter beans, with their creamy white flesh and silky thin skin. I also love fiesta flavors like spicy jalapeño, lime and green chilies. Add in some fire-roasted tomatoes and you have yourself a flavorful side dish or entree that is packed with vegetarian protein and lively fiesta flavor.
