We loves S’mores so much. They are the epitome of summer desserts and there is no limit to how many my daughter can consume in one sitting. No joke! But, sometimes we don’t have a roaring fire in the yard and we are on the go so I make these, the next best thing, no-bake S’more crunch bars. It is all the ingredients of a S’more just melted together in a terrific chocolate treat. They harden up in the fridge and then I just cut them into bite size bars, pack them up, and off we go!
Easy No-Bake S’more Crunch Bars
1 cup unsalted butter
24 ounces milk chocolate
1/2 cup light corn syrup
16 graham crackers
1 10-ounce bag mini-marshmallows
1. Coarsely chop the chocolate and add it to a heatproof bowl with the butter. Melt them together in the microwave and then stir them together until they are smooth and glossy. Then add the corn syrup and stir well. Reserve one cup of the melted chocolate mixture and set aside.
2. Break up the graham crackers by placing them in a zip top plastic bag and hitting it with a rolling pin until they are in small-ish pieces. Stir them into the melted chocolate in the bowl, then stir in the marshmallows.
3. Press the mixture into a 13×9 baking dish and make it is flat as possible. Then, pour the remaining cup of chocolate mixture over the bars and smooth the top with a spatula. Cover with plastic wrap and place the dish in the fridge to chill for at least four hours!
