I’ve been obsessed with recipes for peanut kale salad ever since I tried one version at my favorite macrobiotic restaurant. I tried my own recipe and posted it on my blog Healthy. Happy. Life, as my Spicy Kale Peanut Salad. It is delicious with flavors of garlic, peanut, pickled and fresh ginger and red onion. But something was missing. It was missing a silky sweetness from the version I had at the restaurant. So I rolled up my sleeves and tried a new version. The same basic flavors but with a new added ingredient for sweetness: brown rice syrup. The result is simply divine – and exactly what I was looking to create. And once again, I am in awe of how much I can love kale.
Easy Peanut Kale Salad
vegan, makes 2-3 cups
4 cups kale, chopped, stems removed (about one large bunch)
1 heaping Tbsp peanut butter (or try almond butter too!)
2 tsp tamari or soy sauce
1 Tbsp apple cider vinegar
2 tsp brown rice syrup
fine black pepper to taste
1/2 cup red onion, thinly sliced
optional for a spicy accent:
1/2 tsp chopped ginger
a few dashes cayenne
1/2 tsp chopped garlic
1. Add all ingredients to a large soup pot. Toss well.
2. Cover with lid and turn heat to high. Wait until the small amount of liquid starts to boil.
3. Turn off heat. Shake pot a few times with lid on to distribute heat and steam. Remove lid and toss kale well. Steam will have wilted the kale just enough to be tender.
4. Transfer kale to serving bowl. Serve warm or chill in fridge until ready to serve.
