Easy Pumpkin Cake in a Mug in Minutes

We’ve been moving this week. I have to admit that it’s not one of my favorite things in the world to do. There are still boxes everywhere. And the kitchen is a hot mess. So when I was craving something sweet to eat I thought a mug cake would be just the treat I needed.  It’s incredibly easy and takes just THREE minutes to cook in the MICROWAVE in a MUG and yes it’s delicious.


I made this in a regular sized coffee mug and it worked out just fine, no extra large mug was needed. We garnished ours with whipped cream and chopped pecans. The recipe is easily doubled or tripled to make extra mug cakes.

Pumpkin Cake in a Mug {makes 1 serving}
What you’ll need:
1 egg
2 tablespoons skim milk
1/4 teaspoon PURE VANILLA EXTRACT
1/4 cup pumpkin puree
7 tablespoons all purpose flour
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon allspice
1/4 teaspoon kosher salt

What to do:
1. Place all ingredients into a medium bowl. Mix together.

2. Pour mixture into a regular sized coffee mug. Microwave on high for 1 minute 30 seconds. If there is any spillage at this point, wipe off side of mug. Continue cooking for an additional 1 minute 30 seconds.

Garnish with whipped cream & nuts if desired.
