If you’re looking for an easy egg option for breakfast or brinner (breakfast for dinner) then frittatas are the perfect option. They’re not at all fussy and are completely customizable. I love using up bits and pieces of veggies and meats from the fridge when I’m short on time and need to cook something in a hurry. When I have a little more time to prepare one of our favorite versions is this sausage basil and tomatoes frittata. It’s colorful and delicious. Best part, it takes just minutes to pull together.
