When I think of March I think of my favorite Shamrock Shake. It is the perfect milkshake. Creamy and sweet with just a hint of peppermint, what is not to love! This week I was making some tasty St. Patty’s day treats and whipped up this awesome shamrock shake fudge. Like the shake it is rich and creamy with just a hint of peppermint. I even sprinkled it with little shamrocks for a festive touch.
¼ cup butter, softened
2 cups sugar
12 ounces white chocolate, roughly chopped
7 ounces Marshmallow fluff
½ teaspoon peppermint extract
Green food paste
1. Line a 9×9 square pan with parchment paper and spray it with cooking spray.
2. In a heavy saucepan combine the sugar and butter and cook for about give minutes, or until it reaches the softball stage on a candy thermometer.
3. Remove the mixture from the heat and stir in the white chocolate and fluff until melted. Then stir in the peppermint extract and green food paste if using.
4. Pour the mixture into the pan and smooth the top with a spatula. Chill until firm. Cut the fudge into squares and serve.
