Easy Thanksgiving Recipe: Roasted Chile and Cheddar Corn Muffins

Who’s on Thanksgiving cornbread duty this year? I love cornbread, and even more so, corn muffins. A basket of corn muffins is a welcome dish to any Thanksgiving feast. And if you are traveling or spending the holiday at someone else’s home, these are great to bake up ahead of time and bring with you.

I brought these kicked-up corn muffins to a friend’s chili party recently and everyone, including my kids, enjoyed them. I kept things easy by using a boxed cornbread mix, but added my own special touches to turn them into Roasted Chile and Cheddar Corn Muffins.
