Why a Crisp? I love peach pie – but there are plenty of reasons to make a crisp! I find they are more forgiving in their presentation – so you can literally throw them together in a flash. And there is really not a lot of “cool off” time needed. Just scoop and serve in a sweet little bowl. Fruit Crisps are oh so cozy. And summertime needs a little cozy.
Pair with something white and fluffy if you’d like. I love soy whipped cream or coconut milk vanilla ice cream.
Easy Vegan Peach Crisp
makes one “pie” worth
3 medium peaches, sliced
1/4 cup vegan butter, cubed
1/4 cup lemon juice
1-2 Tbsp sugar or maple syrup
1 Tbsp corn starch
dash of cinnamon
dash of cayenne
1/2 cup flour
1/4 Tbsp melted vegan butter
1/2 cup sugar
2-4 Tbsp water
1/2 tsp baking powder
2 Tbsp oats – optional
1 Tbsp wheat germ – optional
2 Tbsp chopped hazelnuts, walnuts or pecans – optional
1 graham cracker crust (premade or homemade)
maple or agave syrup for drizzling
1. Preheat oven to 375.
2. Toss your filling mixture. Pour into graham crust.
3. Mix together your crumble topping. Spoon out over top filling – in rough bits.
4. Bake at 375 for 25-30 minutes – or until topping begins to lightly brown.
5. Cool as desired. Scoop. Serve.
