Here’s an easy vegan summertime dessert: Summer Peach Crisp! Fresh summer peaches are the star. Those sweet, tender peaches pair perfectly with a rustic, dusty, buttery crumble top. A hint of lemon, a dash of spice – and a hint of graham cracker flavor blended in. Grab some peaches and whip up this vegan crisp!..

Why a Crisp? I love peach pie – but there are plenty of reasons to make a crisp! I find they are more forgiving in their presentation – so you can literally throw them together in a flash. And there is really not a lot of “cool off” time needed. Just scoop and serve in a sweet little bowl. Fruit Crisps are oh so cozy. And summertime needs a little cozy.

Pair with something white and fluffy if you’d like. I love soy whipped cream or coconut milk vanilla ice cream.

Easy Vegan Peach Crisp
makes one “pie” worth

Filling:
3 medium peaches, sliced
1/4 cup vegan butter, cubed
1/4 cup lemon juice
1-2 Tbsp sugar or maple syrup
1 Tbsp corn starch
dash of cinnamon
dash of cayenne

Crumble Topping:
1/2 cup flour
1/4 Tbsp melted vegan butter
1/2 cup sugar
2-4 Tbsp water
1/2 tsp baking powder
2 Tbsp oats – optional
1 Tbsp wheat germ – optional
2 Tbsp chopped hazelnuts, walnuts or pecans – optional

1 graham cracker crust (premade or homemade)
maple or agave syrup for drizzling

To Make:

1. Preheat oven to 375.
2. Toss your filling mixture. Pour into graham crust.
3. Mix together your crumble topping. Spoon out over top filling – in rough bits.
4. Bake at 375 for 25-30 minutes – or until topping begins to lightly brown.
5. Cool as desired. Scoop. Serve.
