Now that I’ve left NYC for the country, I’ve been a little surprised by how many zucchini jokes there are out there (see here, here, or here). But I also happen to be growing my own this year, and when a svelte little zucchini turned into a giant over the course of a weekend away, I started to believe the hype. What I’m saying is, if you grow zucchini or live anywhere near someone who does, you might need a great zucchini recipe up your sleeve. Let me suggest you try some tasty zucchini bread first (here are 17 fantastic recipes), but you’re also going to need something fresh and easy for dinner.
Enter this simple toasted couscous salad with zucchini and grapes. Grapes? Yeah –– they’re awesome. A little sweet, a little savory, with lots of nuttiness from the toasted couscous, this salad works great as a light lunch or as a compliment to a protein for dinner.
