Come Sunday afternoon many of our fridges will be overflowing with hard boiled eggs. What to do with all these colored beauties? There’s only so many hard boiled and deviled eggs I can eat. My kids and I came up with a perfect snack to use up those eggs that’s both healthy and gives us an afternoon boost. To top it off it’s fun to eat, crunch crunch!
Egg Salad Celery Bites Recipe
4 hard boiled eggs
3 tablespoon mayo
1 tablespoon spicy brown mustard (I like Guldens)
1 tablespoon dill relish
4 stalks of celery cut into 1 to 3 inch pieces
Combine the mayo, mustard and relish and pour over hard boiled eggs. Using a pastry blender, cut up the eggs into small cubes, then stir until combined. Spoon onto celery pieces and serve. Serves about 6.
