Egg Salad Sandwiches

Do you have hard boiled eggs leftover from Easter? A great way to re-purpose them is to turn them into a delicious egg salad. Chances are good you have the few ingredients necessary right in your refrigerator. I like my egg salad on a bagel. There’s just something about that soft, chewy bread. I was in Savannah years ago at a bagel shop and they served theirs on, what else, bagels. Before that day I had only ever had my egg salad on plain white bread, but since that day I’ve only ever eaten them on bagels– warm and toasted, to be exact. Swoon.

Egg Salad is about preference. If you like more mayonnaise, add more, less pickles, add less. I like bigger chunks in mine for the texture. Again, do what you like.

You don’t have to have leftover eggs to make this, you can always whip up a new batch. Here’s my recipe for THE PERFECT HARD BOILED EGG.

Egg Salad Sandwiches
What you’ll need: {makes 2 bagel sandwiches}
3 hard boiled eggs – peeled
1 tablespoon mayonnaise
1 tablespoon sweet gherkin pickles – minced
salt/pepper
2 bagels

What to do:
1. Place eggs into a small bowl. Using a fork, crush eggs into bite-sized pieces. Add mayonnaise, pickles. Mix to combine. Season with salt and pepper.

2. Spread onto bagel.
