We love pancakes year-round but why not give them a real holiday twist this year? Instead of stirring milk into the batter use eggnog instead! This is a great way to add holiday flavor without reinventing the wheel. We whipped these up on Saturday morning to enjoy while it snowed outside. They tasted terrific, just like a warm mug of spiced eggnog. I loved the addition of oatmeal to the pancakes because it added great texture and helped bind them together. In fact, they tasted just like oatmeal cookies in a way. Served up with a drizzle of hot maple syrup, they were a delicious and festive dessert for the season!
Eggnog Oatmeal Cookie Pancakes
1 batch homemade pancake mix
1 large egg
1 cup eggnog
1 tablespoon butter, melted and cooled
1 cup quick-cooking oats
1. Mix 1 cup of homemade pancake mix with the egg, eggnog, and melted butter. Then stir in the oatmeal.
2. Melt some butter in a skillet over medium heat and swirl so it coast the bottom of the pan. Drop the batter by the 1/4 cup full into the pan and cook for about 2 to 3 minutes, or until there are bubbles on top. Then flip and cook the other side until golden brown. About another two minutes. Remove to a a plate. Serve with warm maple syrup.
