Family Kitchen's Best Recipes of Summer 2011

Are you ready to say goodbye to summer? I have mixed feelings each year during the transition from summer to fall. There is a definite feeling of excitement and anticipation of all the good things to come…chilly weather, pumpkins, Halloween, football, the holidays…but I have to be honest, I have a hard time letting go of all the good things of summer too. And though I may be complaining a little that our weather is still in the 90s here in Florida, I have a few moments of panic when I think about not being able to swim in our pool or in the ocean for the next 5 or 6 months.

For me, one of the hardest parts of summer to let go of is the food. While putting together this compilation of Family Kitchen’s Best Summer recipes (there are plenty more…but I had to stop somewhere)…all I could think of is “gosh, summer is DELICIOUS”. Look at all this glorious food! Off the vine tomatoes, juicy peaches, candy sweet corn…hard to let it all go isn’t it? But even though the calendar says Fall officially starts tomorrow, we all know there’s still time to enjoy summer’s bounty. The markets are still brimming with colorful produce, maybe in less quantities…but it’s still there, for now.

It’s not too late to try a few more of these scrumptious summer recipes…I definitely see some ratatouille and oven roasted pesto tomatoes in my near future.

    I will miss my garden and eating outdoors and sitting at the kitchen table working with a view of my flower beds. I won’t miss the work it takes to keep up with all of those things so I’m ready for the break. If only we could transition from fall to spring though. Looking forward to winter? Not so much.

    I will miss the easy going nature of summer and definitely the fruits and vegetables of summer. They are some of my favorites. But I’m also looking forward to Fall and cooler weather. Plus I look forward to Fall baking and all the holidays.
