These farm to table vegetable pizzas incorporate a variety of fresh produce that infuses these pita bread crusts with garden-fresh flavor. You can make these year round using what’s seasonal, and they’re ready in less than 30 minutes!
Vegetable Pizzas: Recipe and Photo Compliments of Fresh Home Ideas
Yield: 4 servings
What you’ll need:
1/2 large onion, sliced
2 Tbsp. roasted garlic oil, divided
2 medium zucchini, cut into
1/2 large sweet red pepper, cut into 1½-in. strips
4 1/2 to 6 tsp. minced fresh basil, oregano and/or thyme
1/4 tsp. salt
1/8 tsp. pepper
4 whole pita breads
1/4 cup shredded cheddar cheese
What to do:
1. In a large skillet, saute onion in 1 Tbsp. oil for 3 minutes. Add the zucchini, red pepper, herbs, salt and pepper; saute 4-5 minutes longer or until vegetables are crisp-tender.
2. Brush pita breads with remaining oil. Top with vegetables; sprinkle with cheese. Bake at 400° for 15—18 minutes or until cheese is melted.
