Feeding a Crowd: Potato Cup Frittatas

By averagebetty |

At my house, there is a slight population explosion come summertime. My husband and I have 13 nieces and nephews. And we have a swimming pool. As you can imagine, our place is pretty popular when the temperature soars and parents are already wondering when school starts.

So… how do you feed a crowd of hungry, picky kids (and possibly their parents) without a lot of effort at the stove? Get out your muffin pan and make individual Potato Cup Frittatas, of course! Because Potato Cup Frittatas are individual servings, you can make different variations to suite everyone’s taste all in the same pan.

Watch How to Make Potato Cup Frittatas and tell me, how do you feed a crowd of hungry kids?
