Festive Pumpkin Ravioli in Butter Sage Sauce

Festive Pumpkin Ravioli in Butter Sage Sauce

2 tablespoons of salt (finely ground sea salt is best)
1 lb fresh pumpkin ravioli
2/3 cup unsalted real butter
1 tablespoon fresh ground sage (10 leaves)
1/3 teaspoon nutmeg, freshly grated
2/3 cup parmesan cheese, grated
1/3 cup hazelnuts, toasted and coarsely chopped (optional)

Bring a large pot of water and salt to a boil
Add fresh ravioli and cook for about 3 minutes or until ravioli begin to float to the top
Remove ravioli from water and set aside
In saute pan, melt butter over low heat to avoid burning
When butter begins to sizzle, add fresh sage into the pan and fry for 20 seconds
Remove butter sage sauce from the heat and add grated nutmeg
Put ravioli on individual plates & pour butter sauce over the ravioli
Sprinkle with parmesan cheese and add a dab of toasted hazel nuts (nuts optional)
Serve immediately
Serves 4 (serves two for larger portions of this can’t get enough dish!)
