Feta and Chick Pea Salad

Do you want a quick and easy recipe that won’t heat up the kitchen? This Greek inspired chick pea salad is just the thing. It’s ready as fast as you can chop the ingredients and get it together. I added cucumbers, tomatoes, onions and fresh parsley to this salad. I used plain feta cheese, but you can use any variety to make it just the way you like. Athenos has a great variety of feta cheeses. They have many delicious flavors from lemon garlic and oregano to roasted red pepper and garlic.

I love to make dishes like this in the spring and summer. Here in central Florida, it already feels like summer, so I am pulling out all my favorite hot weather foods.

Feta and Chick Pea Salad


2 cans chick peas, or garbanzo beans, rinsed and drained
2 roma tomatoes, chopped
1 cucumber, chopped
1/2 red onion, chopped
2 tablespoons freshly chopped flat leaf Italian parsley
the juice of 1 lemon
3 tablespoons olive oil
1 tablespoon apple cider vinegar
6 oz crumbled feta cheese
salt and pepper to taste


1. Add all ingredients to a large bowl. Toss well. Serve alone, or with garlic bread.
