For those of you who are following me here on babble.com, first of all, thank you! Second of all, you probably know that a visit to Andrew Weill’s True Food Kitchen last month kicked off something of a health kick, though you’d never know it from looking at the pictures across the top of this page! My mother in law got the most delicious quinoa and beet salad when we were there — but the quinoa was brownish red, not golden like I’m used to. The mystery was solved when I hit Mrs. Green’s last week and came upon Inca Red Quinoa. It’s a little nuttier than the regular kind, but boy does it look pretty on a plate! And since I know it’s your next question, no, the kids didn’t eat it. But for them I plucked out the tomatoes, feta, and walnuts that I had tossed into the quinoa (plus chopped mint and some all-purpose vinaigrette.)
