Four Sweet Potato Casserole Recipes: Southern Comfort, Bourbon, Pineapple and Streusel

There are so many amazing Sweet Potato Casserole Recipes to choose from for Thanksgiving Dinner. I am presenting four options for you to choose from based on your preferences.

Southern Comfort Sweet Potato Casserole:
4 lbs. sweet potatoes
1/2 cup butter
1/4 cup Southern Comfort
1/3 cup orange juice
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon cloves
1 teaspoon salt
1 cup chopped pecans
1 tablespoon shredded orange rind

Preheat over to 350 degrees. Cook sweet potatoes in water for approximately 35 minutes. Drain, peel, and mash with butter. Add Southern Comfort, juice, sugar, spices and mix well. Pour into a 1 1/2 quart buttered casserole dish. Top with orange rind and nuts. Bake for 20-30 minutes.

Kentucky Bourbon Sweet Potato Casserole:
2 (29-ounce) cans sweet potatoes
1/3 cup bourbon
1 cup packed dark brown sugar, divided into 1/2 amounts
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup pecan halves
1 1/2 tablespoons melted butter

Preheat oven to 350F. In a large bowl, mix sweet potatoes, 1/2 brown sugar through salt and then place into a 13-by-9-inch baking pan. Combine remaining 1/2 cup brown sugar, pecans and butter and combine. Sprinkle evenly over the sweet potato mixture and bake 25 minutes or until top is browned.

Pineapple Sweet Potato Casserole:
2 cans (15 ounces each) cut sweet potatoes in light syrup, drained and cut into small pieces
1 can (8 ounces) crushed pineapple in juice, un-drained
1/4 teaspoon ground cinnamon
1/4 cup golden raisins or chopped dates
1/4 cup chopped toasted pecans
1 1/2 cups miniature marshmallows

Preheat the oven to 350 degrees. Combine potatoes through pecans in a large bowl and mix well.  Pour the mixture into a 9-inch deep dish pie pan coated with nonstick cooking spray. Top with the marshmallows and bake uncovered for 35 minutes.

Sweet Potato Streusel Casserole:
Streusel Topping
1/2 cup pecans, chopped, toasted
1/4 cup brown sugar, firmly packed
3 tablespoon flour
1 teaspoon cinnamon
1 medium Rome apple, finely chopped
1 tablespoon unsweetened orange juice
1 tablespoon butter, melted

Combine all of the topping ingredients in a small bowl and set aside.

3 pounds sweet potatoes, peeled
1/2 cup unsweetened orange juice
3 tablespoons Brandy
1 teaspoon butter, softened
1 teaspoon orange zest
1/4 teaspoon fresh ginger, grated
1/4 teaspoon salt
1/8 teaspoon pepper
3 egg whites
1/3 cup brown sugar, firmly packed

Preheat the oven to 350 degrees. Boil sweet potatoes on low until fork tender and then drain. Mash the potatoes with the orange juice, brandy, butter, orange zest, grated ginger, salt and pepper and set aside. Meanwhile, beat egg whites to soft peaks and then slowly add the brown sugar and beat to stiff peaks. Fold  the egg white/sugar mixture into the mashed sweet potatoes. Place the mixture into a greased 2-quart casserole dish and top with streusel topping. Bake for 30 minutes or until puffed.
