Growing up we didn’t throw any leftover food away. It just simply wasn’t done. My Mom was a meal magician, turning those leftovers into new and exciting meals. While living in Italy, she re-purposed our leftover spaghetti by making it into fried spaghetti. I later took it one step further and turned it into spaghetti pizza. Combining two of my loves: pasta and pizza! It’s crunchy on the outside and creamy on the inside!
