I just bought a ton of blueberries from the farmers market and I’m worried we won’t be able to eat them all before they go bad. I could eat fresh, in-season blueberries all day long, but I still have more than I can manage! While I was washing and drying and getting ready to freeze, I remembered the frozen yogurt covered strawberry pops we made last year and it got me thinking about one upping myself this year. My kids are currently obsessed with lemon yogurt, so we’ve got plenty in the fridge and lemon and blueberries are like a match made in taste bud heaven. I decided to give it a go and they turned out so incredibly good I ate the entire batch before the kids got home. No worries, they are so easy to make we whipped up another batch together and had our frozen lemon yogurt covered blueberries for dessert.

Frozen Lemon Yogurt Covered Blueberries
1 box washed, dried, room temperature blueberries
1 small container lemon yogurt
toothpicks and wax paper
Wash and dry blueberries. They must be at room temperature or the berries will create condensation preventing the yogurt from sticking. Place a blueberry onto a toothpick and dunk it in the yogurt. Set it on wax paper that is on top of a plate that can go in the freezer. Repeat with all the blueberries and place in the freezer for at least an hour.
