Smoked Salmon and Spinach Salad with Artichoke Hearts

Summertime is all about fresh eating! Grab some greens, add a few pantry items to the mix, and you can eat well for days. This salad, which is great for lunch or as a dinner side, features lots of tender spinach with shallots, plus delicious smoked salmon and canned artichoke hearts, topped with a creamy dressing. Healthy, simple, and delicious — it’s a nutritious salad that’s perfect for busy summer days.

Smoked Salmon and Spinach Salad with Artichoke Hearts

Serves: 4
Prep Time: 10 minutes

Ingredients:
3 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon prepared horseradish
1 teaspoon Dijon mustard
sea salt and pepper to taste
4 cups baby spinach leaves, rinsed
1 shallot, minced
4 ounces smoked salmon
1 can artichoke hearts, drained and quartered

Instructions:
To make the dressing, whisk the lemon juice into the olive oil. Add the Dijon and horseradish, and a small pinch of sea salt.

Place the spinach and shallot in a large bowl. Drizzle with half the dressing, and toss to coat. Arrange the artichoke hearts and smoked salmon on top; finish with another drizzle of dressing and sea salt and pepper to taste.
